Uddina Vade, Medhu vada, Uddi vada, Minapa Garelu, Uzhunnu vada, Udid Vada, Ulundu Vadai, Urad vada, Ulundu wade, Urdi bara. 😮OMG !! many alternative names. The first time, I am hearing such names. It is one of the popular festive recipes in south India for all special occasions, especially for Diwali. People say that frying sound should be heard at the home for Diwali. So it is a tradition to make Ulunthu Vadai in that auspicious day. It is an outer crispy  & inner soft recipe. We can have this for breakfast along with Idly, Pongal, Dosa or we can have by itself. It is an excellent snack to go with coffee or tea. I love ulundu vadai a lot. Before my marriage, my mom used to make it for me. After my marriage, I came to the UAE with my husband  So, I started to learn for making the fluffy batter, perfect shape vada, and everything from my mom through video calls. When I tried first, I use to shape vada using a banana leaf or plate. By practicing .. I make the perfect shape with a hole in freehand itself.  It is an easy recipe to make. Come!! I will share with you the step by step method of Making crispy and tasty Ulundu Vadai in a simple way.

Ingredients:
1.        Cumin seeds -1/2 tsp
2.        Black pepper -1/2 tsp
3.        Rice Flour- 2 tbsp
4.        Urad dal- 1cup
5.        Shallots- ½ cup (finely chopped)
6.        Green chili- 2 (finely chopped)
7.        Ginger 1 inch  (finely chopped)
8.        Curry leaves  (finely chopped)
9.        Coriander leaves  (finely chopped)
10.    Salt to taste.
11.   Baking soda ( small pinch)
  
Preparation :
1.   Take 1 cup of urad dal (without skin) wash and soak it for at least 1 hour.
2.   After the urad dal soaked well .grind it well into a fluffy batter
     (Add little water and grind well ) Then, Transfer the batter into a bowl.

 Method:
·          Take a bowl with the urad batter.
                        
·     Add the chopped shallots, green chili, black pepper, cumin seeds, curry leaves, ginger, coriander leaves, Salt to taste, Mix well. Then, add 2 tbsp of Rice Flour in it and mix well.
       ðŸ“ŒAdd salt little bit high (not too).
·     Take a small pinch of baking soda in a spoon, add a few drops waters to dissolve, sprinkle it into the batter and mix well.
·     Turn on the flame Take a pan with enough oil to fry.
·     Dip the right hand into the water and make it wet.
           (📌 So, the batter will not stick in hand.)
·     Now, Take a batter and make it as a small ball from your hand, press it gently to flatten it, make a hole by pressing in the center of the batter using thump Finger. 
·     Now the perfect shape Ulundu Vadai is ready to fry. Drop it gently into the oil and fry it. Then, turn the Vadai to the other side using and cook well.
         ðŸ“Œ Note: care should be taken not to over fry it.
·     Repeat the same process with the remaining batter and serve the crispy and tasty Ulundu Vadai with coconut chutney.

Pictorial step by step method:

Step1.   Take 1 cup of urad dal (without skin) wash and soak it for at least 1 hour.


Step2.   Grind well into a fluffy batter. (Add little water for grinding). 

Step3.   Add chopped shallots, green chili, black pepper, cumin seeds, curry leaves, ginger, coriander leaves, Salt to taste. Mix well.


Step4.   Then add Rice Flour and mix well.


Step5.    Take a small pinch of baking soda dissolve it with little water and sprinkle over the batter and mix well.


Step6.   Turn on the flame, take a pan with enough oil to fry.


Step7. i)Dip the hand into the water ðŸ“ŒSo, the batter will not stick in hand)        ii)Take a batter and make it as a small ball, gently press and flatten it, iii) Then make a hole in the center by pressing it with the thump.

Step8.   Drop the vada into the oil and cook. Then, turn to the other side and cook well.




 

Step9.   Repeat the same with the remaining batter.


Step10.     Serve the crispy and tasty  Ulundu Vadai with coconut chutney

  Poondu Kuzhambu is a simple spicy recipe, easy for beginners to do. and We can have this Poondu Kuzhambu curry with steam rice  & any veg poriyal, Papad.

Ingredients
  •    Shallots- 1 cup
  •     Grated Coconut– 1 cup
  •      Onion chopped -1
  •      Garlic- 1 cup
  •      Tomato -2(finely chopped)
  •      Oil -4 tbsp
  •      Chili powder- 1 tsp
  •      Turmeric powder-1/2 tsp
  •      Curry leaves- few
  •      Coriander leaves (few)
  •      Cumin seeds- 1/2 tbsp
  •      Fenugreek seeds- 1/2tbsp
  •      Mustard-1/2tsp
  •      HomemadeKuzhambu Masala – 3 tbsp

Preparation
 ðŸ“Œ Take 1 tsp of oil and add shallots, tomato. Sauté it well and grind it into a smooth paste.
    ðŸ“Œ Add a cup of grated coconut with little water and grind well
   ðŸ“Œ Soak a lemon size tamarind in warm water and extract its juice (1/2 cup). Throw the pulp.

Method:

·     1. Heat a pan with 3tbsp oil, mustard, cumin seeds, fenugreek seeds, curry leaves. Sauté well.
·      2. Now add chopped onion, salt, and cook well till onion turns glassy.
·                Then, add 1 cup of Garlic, cook well.
·    3.Add ½ tsp turmeric powder, 1 tsp chili powder, 3 tbsp Kuzhambu masala and sauté well on low flame.
·    4.Now, add tomato-onion paste and Sauté well.
·     5. Add the 1cup water, mix well.  
·     6. Add the ½ cup tamarind juice in it and cook well.
·     7. Then, add the coconut paste, cook for 10 min, and add the salt if required.
·     8. Finally, garnish with coriander leaves and
Serve the yummy Poondu Kuzhambu with Steamed white rice!!!!

 Step 2:   Grind fried shallots and tomato, make a smooth paste.


Step 3: Add 1 cup of grated coconut with little water and grind well

                                                                 
Step4:  take a pan add oil, mustard, cumin, fenugreek seeds  curry leaves and sauté well


Step5: Add chopped onion and salt till onion turns glassy.


Step 6:  Add 1cup of garlic sauté well.


Step7:  Then, add ½ tsp turmeric powder, 1 tsp chili powder,3 tbsp Kuzhambu masala and sauté it on low flame




Step 8: Add shallot –tomato paste and sauté well.




  Step 9: Add the 1cup of water and cook well.


Step 10: Add the ½ cup tamarind juice in it cook well.


Step 11: add the coconut paste, salt. Cook well for 10 min.



Step 12: Garnish with coriander leaves and  



        Serve the yummy Poondu Kuzhambu with Steam rice!!!

Mutton Chukka recipe is a famous South Indian recipe in the Madurai region of Tamilnadu. NonVeg meal is not fulfilled without mutton chukka. Adding freshly ground masala along with the mutton is a mouthwatering one. This is one of the best dry mutton recipes that you can add in your nonveg meal for special occasions. Here I will share with you how to make Madurai Mutton Chukka recipe with step by step pictorial procedure. Cook and Serve for your loved ones.

Ingredients:

Mutton
- 250gm
Shallots
-10 no’s
Onion (chopped)
-1 cup
Tomato
-1
Mustard seeds
-½ tsp
Ginger garlic paste
-1tsp
Garam Masala powder
-½ tbsp
Turmeric powder
- ½ tsp
Black pepper powder
- 1 tbsp
Chili powder
- ½ tbsp
Grated coconut
-½ cup
Curry leaves
-few
Cooking oil
 3 tbsp
Cashews &green chili
Optional

  


Preparation:

📌Mutton cooking:
  •         Take a Mutton wash and clean with turmeric powder
  •          Take a pressure cooker with 1 cup of water, mutton with salt and cook well for 5 whistles.

📌Masala Preparation:
  •            Add ½ tsp oil with shallots, tomato in a pan, sauté well and keep aside.
  •            Take a blender to add ½ a cup of grated coconut with little water and blend it.
  •             Then add 1/2tbsp of chili powder, 1/2tbsp of garam masala powder, 1/2tsp of turmeric powder, add fried shallots, tomato, and ginger garlic paste in it and blend well into a smooth paste.

Method:
  •        Take a pan to add 2tbsp oil, mustard seeds, curry leaves.
  •        Add chopped onions sauté it well.
  •         Add the cooked mutton pieces.
  •         Add the grounded paste and salt and cook well.
  •         Then add 1 tbsp of black pepper powder roast well.  📌Cook well until all the masala gets dry.
  •        Take a pan fry the sliced green chilies and few cashews, Curry leaves with 1/2tbsp of ghee. And garnish it. (optional)

·        Now  Madurai Mutton Chukka is ready to serve.

Pictorial step by step method:

Step1 : Take a pressure cooker with mutton, salt, and cook well for 5 whistles.


Step2: Take a pan, Add ½ tsp oil with shallots, tomato, sauté well and Add ginger garlic paste,1/2cup grated coconut, 1/2 tbsp of chili powder, 1/2tbsp of garam masala powder, 1/2tsp  turmeric powder blend well into a smooth paste.

   

Step 3: Take a pan to add 3 tbsp of oil, mustard seeds, curry leaves.



Step4: Add chopped onion sauté well until it turns golden brown color.


Step5: Add the mutton pieces, salt and cook well.



Ste6: Now add the grounded masala and sauté well.


Step7: Add black pepper powder and roast well until all the gravy gets dry.

   


Step8:  Take a pan fry the sliced green chilies and few cashews, Curry leaves with 1/2tbsp of ghee. And garnish it. (optional)




·          Yummy Madurai Mutton Chukka is ready to serve!!

                      Serve it with Roti, Biriyani, steam rice.
