Spicy Masala Egg Fry/ Egg Masala Piratal is an easy, simple, delicious, and quick & simple egg recipe.  This is not a complete dry recipe, you can have it with steamed plain rice, roti. This is my fav egg fry recipe, it is a regular recipe in my kitchen. Whenever I find coconut is going to expire, I prepare coconut milk rice.  I use coconut milk in common for making both spicy egg fry & coconut milk rice recipe. It is an excellent combo, must try recipe-combo. It is simple to make and yet delicious to have. 

                               This kitchen is seasoned with Love!!!!                     


Come I will share with you all, How to Make a Simple, spicy tasty egg masala fry with step by step pictorial method. Hope you all love it ðŸ’“

 Ingredients
  • Hard-Boiled eggs-3
  • Ginger &garlic paste -1 tsp 
  • Oil- 1tbsp
  • Onion -1(finely chopped)
  • Green chili- 2 
  • Salt-req
  • Cinnamon-1,Cardamom-2, cloves-2
  • Tomato -1 ( finely chopped)
  • Coriander leaves to garnish
  • Curry leaves-few.
  • Cummin seeds-1tsp
  • Mustard-1/4tsp
  • Urad dal-1/4tsp
  • IndianGaram masala-1 tsp
  • Chili powder-1/2tsp
  • Turmeric powder-1/4tsp
Instructions: 
·     Boil the eggs in a pan for about 10 min in a medium flame with enough water, close the lid and cook until the cracks found. allow it to cool, then egg peel off the shell, slit the eggs on four sides in equal space.
· Heat a pan, to add 1tbsp of oil, mustard seeds, urad dal, curry leaves, 1 cinnamon, 2cloves 2 cardamom, cumin seeds, saute well.
·  Add chopped onion, 2 sliced green chilies, saute well until onion turns glossy. Then, add ginger &garlic paste saute well until the raw smell goes away. 
·  Add 1tsp of chili powder,1/4tsp of turmeric powder, 1tsp of  Indian garam masala, 1/2 tsp chili powder salt req mix well. Add the chopped tomatoes, mix and cook well.
· Now, add the slitted eggs, mix well. 
·  Add 1/4 cup of coconut milk, mix and cook well for 7-8 mins until oil separates (check for salt &spice).
                      Yummy, Delicious, Masala spicy egg fry is ready to serve.
                                 
Serve it with plain steamed plain rice, roti, all veg rice. I love to have Spicy masala egg fry with coconut milk rice. Yummy!!!!! its an excellent combo!!!!!

How to make Spicy masala Egg fry with step by step pictorial method:

SennaiKilangu fry/Elephant foot yam fry is a popular wedding recipe in the Indian state of Tamilnadu. we can make more recipes using yam, but this is the mandatory recipe on all occasions in the veg menu list in Tamil Nadu. this is a flavourful vegetarian side dish that goes well with sambar rice, curd rice, rasam. when we eat in marriage functions some dishes hit our mind to try in our kitchen, this recipe is one among them. 

Come!! I will share with you all how to make sennaikilangu fry/elephant foot yam fry step by step pictorial method.

 Ingredients
    Yam- 3 cups(chopped)
     Garlic -Garlic Paste -1 tsp
     Coriander - few
     Cinnamon- 1 (1 inch )
     Cloves-2
     Cardamom-2
     Cumin seeds- 1tsp
     Fennel seeds-1/2tsp
     Oil-2 tbsp
     
   Onion-1  (chopped)
     Tomato -1(chopped)   
   Chili powder- 1/2 tsp
     Garam masala-1 tbsp
     Curry leaves- few
  GratedCoconut 1/2cup
  Salt- req 

     

Preparation:

YamPreparration:

  •  Peel the yam skin, chop it into small pieces, wash it twice 
  •  Heat the pan to boil the chopped yam with enough water,1tsp of turmeric powder, salt req for about 10-15 min. (until the yam 80% cooked).
  • Once the yam gets cooked, smash few cooked yam pieces gently with the fingers (as shown in the picture below), allow it to cool. 
  • Heat a pan with enough oil for deep fry, add the cooked yam and fry it, and keep it aside. 
Masala Preparation:
  • Take a blender, add grated coconut, fennel seeds, cinnamon, cloves, cardamom, blend it without adding water, keep it aside.

 Instructions:

  • Take a pan to heat 1 tbsp of oil, mustard seeds, cumin seeds, curry leaves.
  • Add chopped onion, salt. cook well until onion turns glossy.
  • Then, add ginger-garlic paste and sauté well until the raw smell goes away.
  • Then, add the chopped tomato, sautés well in low flame for a few mins.
  •  Add chili powder, Gram masala, salt, mix well.
  •  Now, add Fried yam pieces, mix well.
  • Add the ground coconut masala, mix, cook well for a few mins.
  • Turn off the flame, garnish it with coriander leaves.

       Serve the spicy, tasty SennaiKilangu fry/Elephant foot yam fry with boiled plain rice, SpicyPoondu kuzhambuSimple Dal fryTraditional Rasam!!!!

 How to make sennaikilangu fry/elephant foot yam fry in step by step Pictorial  Method:

Coconut milk Rice is one of the healthiest and tastiest rice recipes. It suits with non-veg curry and truly satisfies the meal of the day! Here, I will explain to you all, how to make coconut rice in the pressure cooker method, which is more famous in the Indian state of Tamil Nadu. For making coconut milk rice,  you can use regular rice or seeraka samba rice or basmati rice. I used regular rice to make this recipe. Adding Coconut milk extract, coconut oil will add flavor to the rice. Veg and Non-veg curry go well with this. I like to have mutton curry, mutton sukka along with coconut rice gives an amazing taste & it will stimulate your taste bud to want more and more.

  Cuisine: Indian
  Prep Time: 20 minutes
  Cook Time:40 minutes

Ingredients:
  •     Regular Rice-1½ cup-Water Ratio (1: 1.5)
  •     Coconut oil  -2 tbsp
  •      Ghee- 1 tbsp (skip if you are vegan)
  •   Mustard seeds- 1tsp
  •      Onion (chopped)- 1/2 cup
  •      Green Chilly -4
  •      Ginger Garlic paste-1tbsp
  •      Bay leaf -1
  •      Stone flower -3
  •      Cinnamon- 2( 1-inch)
  •      Cloves-5
  •      Cardamom-4
  •      Star Anise -1
  •      Curry leaves- few
  •      Mint leaves-( one full hand)
  •      Salt- req 
Preparation
  •         Wash and soak the rice for 10 min.
  •         Take 1 ½ cup of grated coconut, add water, extract 1 ½ cup coconut milk.
Method:
·        Heat a pressure cooker pan with coconut oil, ghee. add, mustard, curry leaves, cinnamon, cardamom, cloves, star anise, fennel seeds, and sauté it.
·        Add ginger-garlic paste and sauté well, until raw smell goes.
·        Add chopped onion, green chili. mint leaves, Saute well until onion turns glossy.
·        Add 1 -1/2 cup coconut milk and 1cup water and mix well. 
·        Add Rice and Check for salt, Mix well. 
·        Close the lid and cook for 5 whistles in low flame for regular rice.
            note : (20min soaked basmati rice -1 whistle in low flame rest for 10 min; 20min soaked
            Seeraka samba  rice -3 whistle in low flame and rest 10 min )
·        Turn off the flame and rest for 10min. 
Serve the tasty Tasty Coconut rice with Aloo green peas curry or mutton sukka or any non-veg curry.

Pictorial step by step Method:

     
 Prep Step 1:Wash and soak the rice for 10 min
  Prep step 2 : Take 1 ½ cup of grated coconut, add water, extract 1 ½ cup coconut milk. 

                                                                                               
                           
Step 1: Heat a pressure cooker with oil, ghee, cinnamon, cloves, star anise, stone flower, bay leaves, cardamom, and sauté well.



Step 2: Add ginger & garlic paste and sauté well until raw the smell goes.
   
Step 3: Add green chili, chopped onion, salt. sauté well, until onion turns glossy.


Step4: Add a mint leaf, sauté well.

Step 5: Add 1 -1/2 cup coconut milk and 1cup water and mix well. Cook for 2 min.

 

Step6: Now, add regular rice and mix well.
 

Step7: Check for salt, close the lid, and cook for 5 whistles in low flame. turn off the flame and rest for 10 min.

    Note : (20min soaked basmati rice -1 whistle, turn off the flame and rest for 10 min; 20min soaked seeraka samba  rice -3 whistle, turn off the flame and rest 10 min
   

      

Serve the tasty Tasty Coconut rice with Aloo green pea’s curry or mutton sukka, liver fry  or non-veg curry
